A light and healthy side dish that takes just a few minutes to make. Perfect for warm days or when you need a quick veggie boost.
Ingredients (Serves 2)
- Chicken tenders (sasami) – 2 pieces
(microwaved and shredded) - Cucumber – 1
(halved lengthwise, then sliced diagonally) - Salt – a pinch
★ Seasoning
- Sesame oil – 1 tbsp
- Rice vinegar – 1 tbsp
- Soy sauce – 1 tbsp
- Sugar – 1 tsp
- Cherry tomatoes (optional) – as needed
Instructions
- Cut the cucumber in half lengthwise, then slice diagonally.

2. Sprinkle salt over the cucumber and gently massage to coat evenly.

3. Let sit for about 5 minutes, then squeeze out excess moisture well.

4. Place the chicken tenders in a microwave-safe container, cover with plastic wrap, and microwave at 600W for 2–3 minutes.
Once cooled slightly, shred the chicken by hand.
5. Add the cucumber and shredded chicken to a bowl.

6. Add all the ★ seasoning ingredients.

7. Toss well until everything is evenly coated.

8. Transfer to a serving dish and serve.

9. Storage: Store in an airtight container in the refrigerator.
This dish is great for meal prep.

Tip:
This time, we used chicken tenders, but you can also make this dish with chicken breast and it will be just as delicious.
