Refreshing Chicken and Cucumber Salad (No Stove Needed!)

A light and healthy side dish that takes just a few minutes to make. Perfect for warm days or when you need a quick veggie boost.

Ingredients (Serves 2)

  • 2 chicken tenders (cooked in the microwave and shredded)
  • 1 cucumber (sliced diagonally)
  • Salt (for draining cucumber)
  • 1 tbsp sesame oil
  • 1 tbsp vinegar
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • A few cherry tomatoes (optional, halved)

Instructions

  1. Slice the cucumber, sprinkle with salt, and let sit for 5 minutes. Squeeze out excess water.

  1. Microwave the chicken tenders for about 2–3 minutes, then shred.

3. Combine all ingredients in a bowl, including cherry tomatoes if using. Mix well and serve chilled.
