Ingredients (Serves 2)
- 2 chicken tenders (cooked in the microwave and shredded)
- 1 cucumber (sliced diagonally)
- Salt (for draining cucumber)
- 1 tbsp sesame oil
- 1 tbsp vinegar
- 1 tbsp soy sauce
- 1 tsp sugar
- A few cherry tomatoes (optional, halved)
Instructions
- Slice the cucumber, sprinkle with salt, and let sit for 5 minutes. Squeeze out excess water.

- Microwave the chicken tenders for about 2–3 minutes, then shred.

3. Combine all ingredients in a bowl, including cherry tomatoes if using. Mix well and serve chilled.
